North Americans apparently like chickens with big breasts and not legs. Don’t mean to seem rude about this but it’s just a fact.
Call me a leg man. Okay sorry that is a tacky joke. Sorry I actually find beauty in many different shapes. But I am told Latin American consumers find chicken thighs more tasty. I personally think they have more flavour - chicken breast meat seems pretty bland to me.
I dunnoe about you but nothing to me sounds more attractive than a big juicy chicken breast with a good side of anti-biotics - delish!!! Yum yum yum!
These genetically modified chickens are not terribly healthy - their legs are too small to support their weight and that creates a lot of production issues. A lot of these chickens die during their short lives.
You have to be very careful with hygiene and temperature is very important.

But eh - you have to start somewhere. Once you Shine a Light on temperature and humidity you can then start to do A/B testing and try different breeds of chicken and start to see different outcomes.
